From our home base a few miles outside of Fairbanks, Alaska, we spend the winter months on snowshoes, harvesting chaga conks the way Alaskan subsistence families have for generations.

          What is chaga?

          Chaga (Inonotus obliquus) is a parasitic mushroom that grows on birch trees in extremely cold climates — primarily Alaska, Canada, Siberia, and Northern Europe. It looks like a jet-black charcoal growth on the side of a living tree. Inside, it's golden-brown and packed with beta-glucans, polyphenols, and betulinic acid.

          Every piece of chaga we sell is hand-harvested from wild birch trees in Tanana Valley region of Interior Alaska. We harvest during the winter when the chaga is most potent. We never buy, resell, or import chaga from other regions.

          Tea bags can be added directly to a cup and brewed with hot water.

          Simmer a chunk in a crockpot on low overnight for a deeper, darker brew. Don't boil chaga — a slow simmer extracts the water-soluble compounds without destroying them. You can re-use the same chunks 2-3 times in wrapped and kept in a freeer between bartches. One chunks make a full crockpot of tea and leftover tea can be stored in fridge for up to a week and later served hot or cold.

          Earthy, a little like coffee without bitterness. Many customers describe it as "like the forest in a cup." If you want it sweeter, a touch of honey or maple syrup complements it well.

          Chaga has been consumed daily by people in Russia, Finland, and Alaska for centuries. It is safe but customers with high blood pressure issues or who are currently on blood pressure medication should consult with the physician first as chaga is known to lower blood pressure.
